Well, sometimes 8K can be useful.
I have such on one of my smartphones and it works ok if you have good lighting.
I agree - 8K per se (ceteris paribus) - is very useful, including zooming and panning in post and retaining 4K resolution. It does expand scope for creativity. But there are lots of other attributes of good video, and it is apparent that these are quite inferior to even other cell phones as displayed in the video. The overall look is quite bad. I hope your cell phone video looks better than in the video above (which has good lighting).
The video is also not HDR.
