The title mostly says it all. The obvious would be to just get best of everything, but theres a mater of money ofcourse :) I curently own a i7 2500k machine with 16GB ram and a 1060 GPU. I have a bunch of SSDs and I would keep the GPU. So what to get? I`ve been looking at AMD ryzen 5 3600x cpu, 32 Ram. Would this setup cut it? I know that I will probably still have to transcode, but this is kinda my budget, 500€ fot the upgrade.
What NLE are you using?
Usually Intel is better option if you have funds and want turnkey NLE support (due to faster cores and QuickSync).
Fore AMD in case of total funds shortage can try 1700X + good cooler + good motherboard + nice 32GB 3200Mhz RAM.

And later jump to their 16 core CPU.
I use premiere for editing and davinci for grading and a bit of AE for animation.
Pretty typical. Note that Premiere usually likes Intel more.
I suggest to give 1700X-2700X a try (will be actually slower than 3600X, but also much cheaper and with time it'll catch as software starts to work better with more cores).
If you have funds go right up to latest 8-12 cores AMDs (but as you say you don't).
1700x-2700x are only marginaly cheaper here. 20-50€, so I guess it doesn`t hurt to get the new gen, easyer to sell aftervards if needed. How about the MOB? It is work clocking it?
Where is your place?
Note that 1700X and 2700X are plenty on used markets, including sets with MBs.
